Guacamole |  Vegetable/Fruit Day

As a dip, sauce or salad dressing, delicious doesn't get more versatile than guacamole! This recipe is brought to you by member Acc(u)Val.

Makes 2 servings. 8 oz of daily vegetable allowance.

Ingredients
  • 1 avocado, peeled and cut off seed
  • 1 small onion, quartered
  • 1 medium tomato, quartered
  • 1 rounded tsp chopped garlic
  • Cilantro, to taste (fresh is best)
  • Chili powder, to taste
  • Lemon or lime, quartered
  • Salt, to taste
Directions
  • Place avocado, onion, tomato and garlic in a food processor.
  • Pulse briefly.
  • Squeeze lemon or lime juice into mixture, to taste.
  • Add cilantro, chili pepper and salt, to taste.
  • Pulse until desired texture is achieved.
  • Enjoy!
