Vegetable Stock Option |  Vegetable/Fruit Day

Great for a vegetable soup base

  • yellow onions, quartered
  • 1 red onion, quartered
  • 5 carrots, chopped
  • 3 leeks, chunks
  • 3 celery stalks, chopped up
  • 1 garlic clove
  • 1 bay leaf
  • preheat oven to 450 F.
  • put the vegetables in a baking pan, for 1 hour. Stir occasionally
  • place vegetables in a soup pot, add 2 quarts water, simmer 1 hour
  • strain
  • can be refrigerated for four (4) days or frozen for a week
