Broccoli Soup (Pat) |  Vegetable/Fruit Day

Serving size is 8 ounces

  • head broccoli (cut into chunks )
  • 1 med. onion (sliced )
  • 1 stalk celery (sliced )
  • 2 cloves garlic (sliced )
  • salt and pepper
  • 1 cup vegetable stock
  • 2 cups water
  • sauté onion, celery and garlic until limp
  • add broccoli, salt and pepper
  • cover with vegetable stock and water
  • bring to a boil then lower heat and simmer until broccoli is very tender
  • let cool and process until smooth
  • pat uses a stick blender right in the pot. If too thick add more water
