Gilda's Bok Choy Soup |  Vegetable/Fruit Day

  • 8 oz. veggie broth
  • 1 or 2 ribs of bok choy, sliced thin on the diagonal-stem and leaves
  • 1 scallion chopped
  • sliced shitake mushrooms
  • fresh ginger (if you have some, about a quarter-size slice)
  • Miracle Noodles (optional)
  • Bragg's Amino Acids (optional)
  • heat veggie broth
  • add bok choy, shitake mushrooms, scallion, fresh ginger
  • add rinsed Miracle Noodles (optional)
  • bring to a boil and simmer 1 to 2 minutes
  • add Bragg's Amino Acids (optional)
