Butternut Squash Soup |  Vegetable Day

Ingredients
  • 2 ½ lbs butternut squash
  • 2-3 carrots
  • 1-2 celery stalks
  • 1 onion
  • 2 apples
  • 5-7 cups of vegetable broth
  • 1 ½ tsp curry powder
  • pinch of nutmeg
  • pinch of ginger
Directions
  • mix everything in a large pot
  • bring to the boil and then simmer for 40 minutes
  • puree with a stick blender or in a blender
  • enjoy!
