Butternut Squash Soup |  Vegetable/Fruit Day

Try this creamy, delicious butternut squash soup to warm you up on a cold winter's day.

  • 2 ½ lbs butternut squash
  • 2-3 carrots
  • 1-2 celery stalks
  • 1 onion
  • 2 apples
  • 5-7 cups of vegetable broth
  • 1 ½ tsp curry powder
  • Pinch of nutmeg
  • Pinch of ginger
  • Mix everything in a large pot.
  • Bring to the boil and then simmer for 40 minutes.
  • Puree with a stick blender or in a blender.
  • Enjoy!
