Whipped Cream |  Milk/Yogurt Day

This recipe brought to you by member Acc(u)Barbara.

Makes 2 servings. Uses 2 oz of daily milk allowance.

Ingredients
  • 3 oz milk
  • 2 Tbsp plain yogurt
  • 1/2 tsp xanthan gum
  • 2-3 packets Truvia or other zero-calorie sweetener
  • 1 tsp pure vanilla extract, optional
Directions
  • Put whisk in freezer for 15 minutes.
    • Note, we whisked by hand, but you may use an electric mixer.
  • Make sure milk and yogurt are refrigerated until you are ready to begin - cold ingredients whip better.
  • In a medium bowl, whisk milk briskly until it becomes a thick froth (3-5 mins).
  • Add the yogurt and continue to whisk briskly.
  • Add xanthan gum and whisk for 1 minute.
  • Let stand for 2 minutes.
  • Whisk briskly again until consistency allows you to create "peaks".
    • Note, the more xanthan gum you use, the thicker/more gelatinous it will get. It is ok to use up to 1 tsp for this recipe.
  • Add sweetener, to taste.
  • Add vanilla, if desired. Gives it a “marshmallow” flavor.
  • Use as a topping on Acc(u)Legal hot chocolate, chocolate pudding, jello, an ice cream sundae or on its own with a spoon!
  • Enjoy!!
