Cheri's Open Faced Sandwich |  Vegetable/Fruit Day

NOTE: uses Janet's Plantain Toast as a base. See http://tinyurl.com/PlantainToast.


Makes 1 serving - topping uses 7 oz of your daily vegetable allowance
(plantain toast counted separately)

Ingredients
  • 3 oz avocado, sliced
  • 2 oz sweet onion, sliced
  • 2 oz tomato, sliced
  • sea salt, to taste
  • fresh basil, chopped
  • lemon juice
  • PAM or other zero-calorie cooking spray
Directions
  • make Janet's Plantain Toast
  • place avocado slices on the toast and drizzle with lemon juice
  • lightly spray a pan with PAM and “fry” onions
  • place “fried” onions on top of avocado
  • top with sliced tomato
  • sprinkle with sea salt
  • top with chopped basil
  • enjoy!
