Faux Mashed Sweet Potatoes |  Vegetable/Fruit Day
    
	Simple to make, this delicious low carb alternative to sweet potatoes is a staple on our table. 
 Makes 4 servings. Uses 5 oz of daily vegetable allowance.
	  
	
    
    Ingredients
	     
							- 20 oz package of butternut squash, cubed
 
                            - 1/4 tsp nutmeg
 
                            - 1/4 tsp cinnamon
 
                            - Stevia or other zero calorie sweetener, to taste
 
                            - PAM or other zero calorie cooking spray
 
                            - Walden Farms or other brand zero-calorie Marshmallow Dip, optional
 
						
  
    Directions
     	
							- Pre-heat oven to 400˚F. 
 
                            - Spray a baking tray with PAM.
 
                            - Spread butternut squash on tray and bake until  tender, approximately 45 minutes, turning occasionally.
 
						
                      
                        
                          - Transfer baked squash into a bowl.
 
- Mash with a fork or potato masher.
 
                          - Sprinkle in cinnamon, nutmeg and sweetener, mixing well.
 
                          - Adjust seasonings to personal taste.
 
                          - Optional, top with a dollop of zero-calorie marshmallow dip.
