Roasted Red Pepper Dressing / Dip |  Vegetable/Fruit Day

Makes 8 servings - uses 4 oz of your daily vegetable allowance

Ingredients
  • 12 oz roasted red peppers
  • 1 avocado
  • 2 ½ mini cucumbers, peeled
  • 1 medium red onion
  • juice of 1 lemon
  • ½ TBSP garlic powder
  • ½ TBSP onion powder
  • salt
  • pepper
Directions
  • puree all ingredients
    • use water to adjust consistency
  • add spices, to taste
  • enjoy as dip or salad dressing!
