Japanese Salad Dressing |  Vegetable/Fruit Day

Makes 4 servings - uses 2 oz of your daily vegetable allowance

Ingredients
  • 1 cucumber
  • 1 very small clove of garlic
  • 2 packets zero-calorie sweetener
  • onion powder (to taste)
  • lemon juice (to taste)
  • xanthan gum
Directions
  • peel cucumber
  • cut into thick chunks
  • put cucumber, garlic, sweetener, onion powder and lemon juice in blender
  • mix until smooth
  • if thicker consistency desired, add a pinch of xanthan gum and blend
  • enjoy!
