Summer Salad |  Vegetable/Fruit Day

This crisp, refreshing salad will enhance any meal. This recipe brought to you by member Acc(u)Jill.

Makes 2 servings - uses 12 oz of your daily vegetable allowance and ½ cup of your daily fruit allowance

Ingredients
  • 1 red onion
  • 1 Vidalia or sweet onion
  • 1 ripe avocado
  • 2 tomatoes
  • 1 cucumber
  • 1 cup fresh watermelon or mango
  • 1 lemon
  • Salt
  • Pepper
Directions
  • Chop onions, avocado, tomatoes, cucumber, watermelon/mango.
  • Toss ingredients in a large bowl.
  • Squeeze lemon over salad.
  • Add salt and pepper, to taste.
  • Toss salad.
  • Enjoy!
