Cucumber Spiral Salad |  Vegetable/Fruit Day

Makes 2 servings - uses 8 oz of your vegetable allowance

  • 1 medium cucumber
  • 1 medium carrot
  • ¼ red onion
  • 10 red and yellow grape or cherry tomatoes
  • fresh basil
  • salt
  • pepper
  • lemon juice
  • using spiralizer, cut cucumber and carrot and arrange on plate
  • slice onions and tomatoes and place on top of vegetable spirals
  • leave a few basil leaves for garnish, finely chop the rest
  • dress the salad with the chopped basil, salt, pepper and lemon juice, to personal taste
  • garnish with remaining basil leaves
  • enjoy!
