Cucumber Spiral Salad  |  Vegetable/Fruit Day
    
	Makes 2 servings - uses 8 oz of your vegetable allowance
	  
	
    
    Ingredients
	      
                      - 1 medium cucumber
 
                      - 1 medium carrot
 
                      - ¼ red onion
 
                      - 10 red and yellow grape or cherry tomatoes
 
                      - fresh basil
 
                      - salt
 
                      - pepper
 
                      - lemon juice
 
                    
  
    Directions
     
                      - using spiralizer, cut cucumber and carrot and  arrange on plate
 
                      - slice onions and tomatoes and place on top of  vegetable spirals
 
                      - leave a few basil leaves for garnish, finely chop  the rest
 
                      - dress the salad with the chopped basil, salt,  pepper and lemon juice, to  personal taste
 
                    
                      - garnish with remaining basil leaves
