Avocado And Mango Salad |  Vegetable Day

Makes 2 servings

  • 2 avocados, diced
  • 1 ripe mango, diced
  • 1/4 - 1/2 red onion, diced
  • fresh mint, minced
  • Pam
  • fresh lime
  • lettuce mix
  • Lightly spray avocados, mango, onion, fresh mint with Pam (optional on start-up weeks)
  • Squeeze fresh lime
  • Place on a bed of your favorite lettuce mix
