Cucumber Avocado Soup |  Vegetable/Fruit Day

(adapted from “Mother Nature Network”)

Makes 2 servings - uses 12 oz of your daily vegetable allowance

Ingredients
  • 2 cucumbers, peeled, seeded and sliced
  • 1 ripe avocado, halved, pitted and peeled
  • ¼ cup jalapeno pepper, seeded and sliced
  • ¼ cup fresh cilantro
  • 1 TBSP ReaLime juice or other zero-calorie lime juice
  • 1 TBSP ReaLemon juice or other zero-calorie lemon juice
  • ¼ cup water
  • ½ tsp sea salt
  • 6 cherry or grape tomatoes, halved (optional)
Directions
  • put all ingredients, except for tomatoes, in blender
  • mix until smooth
  • adjust seasonings to personal taste
  • chill in refrigerator for at least one hour
  • garnish with tomato halves and/or sprig of cilantro
  • enjoy!
