Cauliflower Soup |  Vegetable/Fruit Day
    
	Makes 4 serving – uses 8 oz of your daily veggie allowance
	  
	
    
    Ingredients
	     
				            - 1 cauliflower,       cut into medium chunks
 
                               - 2       onions, chopped
 
                               - garlic (optional)
 
                               - 2-3       celery stalks, chopped
 
                               - 16 oz.       veggie broth
 
                               - salt       & pepper
 
                               - nutmeg       (optional)
 
                               - Zero       Calorie Cooking Spray
 
                               - parsley,       chopped
 
						
  
    Directions
     
			                - Spray       soup pot with zero calorie cooking spray
 
						
                          - Saute       onions,  celery and garlic (optional)
 
                        
                          - When       vegetables starting to soften, add veggie broth
 
                          - Add       cauliflower
 
                          - When       cauliflower is tender (about 20 min.), it’s ready to puree
 
                          - Either       puree in the pot with a immersion blender       or move into a blender. Blend until smooth.
 
                          - Add       seasonings to personal taste
