Cauliflower Soup |  Vegetable/Fruit Day

Makes 4 serving – uses 8 oz of your daily veggie allowance

  • 1 cauliflower, cut into medium chunks
  • 2 onions, chopped
  • garlic (optional)
  • 2-3 celery stalks, chopped
  • 16 oz. veggie broth
  • salt & pepper
  • nutmeg (optional)
  • Zero Calorie Cooking Spray
  • parsley, chopped
  • Spray soup pot with zero calorie cooking spray
  • Saute onions,  celery and garlic (optional)
  • When vegetables starting to soften, add veggie broth
  • Add cauliflower
  • When cauliflower is tender (about 20 min.), it’s ready to puree
  • Either puree in the pot with a immersion blender or move into a blender. Blend until smooth.
  • Add seasonings to personal taste
  • Garnish with fresh parsley before serving
