Stuffed Mushrooms |  Vegetable Day

Ingredients
  • ½  cauliflower
  • 1 carrot (chopped finely)
  • ¼ broccoli in small pieces
  • kale flakes
  • Pam
  • salt & pepper
  • 6 large mushrooms
Directions
  • Process fresh cauliflower in a food processor until it is the size of rice
  • Microwave cauliflower in a covered dish until soft (DO NOT ADD WATER)
  • Add kale flakes, broccoli, carrots, salt & pepper and mix
  • Remove stems from mushrooms and fill with the cauliflower rice mixture
  • Spray with Pam
  • Bake in the oven for 20 minutes until soft
  • Enjoy!
