Homemade Salsa (Debbie) |  Vegetable Day

Makes 3 servings - uses 6 oz of your daily vegetable allowance

  • 3 ripe medium sized tomatoes, diced
  • 1 small jalapeno pepper, diced
  • ¼ cup red onion, minced
  • ¼ cup cilantro, chopped fine
  • juice of 1 lemon
  • put diced tomatoes, jalapeno pepper, onion, cilantro in bowl
  • add lime juice, toss, taste and add more lime juice to taste
  • enjoy!
