Green Beans With Roasted Red Bell Peppers |  Vegetable Day

Makes 3-4 servings

Ingredients
  • 1/2 lb. green beans, ends removed, steam or cook for 5 minutes in boiling water
  • spritz of PAM
  • 1 teaspoon garlic, minced
  • 1/3 cup roasted red peppers (canned) diced
  • salt and freshly ground pepper to taste
Directions
  • heat the oil in a skillet
  • add the beans and cook until just soft
  • add the garlic and peppers
  • spray Pam in skillet
  • add cooked beans
  • add the garlic and peppers
  • cook for 2 minutes longer (add a little water or veggie broth if necessary)
  • taste test for seasonings
  • serve warm
