Acorn Squash With Apples |  Vegetable Day

Makes 2 servings - uses 10 oz of your daily vegetable allowance and 1 cup of your daily fruit allowance

Ingredients
  • 1 small acorn squash
  • 1 granny smith apple, peeled, cored and cubed
  • 2 tsp Truvia or other zero-calorie sweetener
  • cinnamon (optional)
  • nutmeg (optional)
Directions
  • pierce the squash several times with a sharp knife (to let steam escape while cooking)
  • microwave squash on high until tender (approximately 10 minutes)
    • turn the squash after 5 minutes to ensure even cooking
  • in a small bowl, mix the apple and Truvia
  • cut the squash in half
  • scoop out and discard the seeds from the squash
  • fill the hollowed squash with the apple mixture
  • microwave squash for 2 minutes
  • transfer squash to serving dish
  • sprinkle with cinnamon and nutmeg (optional)
  • enjoy!
