Jicama Sticks And Salsa |  Vegetable Day

Makes 4 servings - uses 10 oz. of your daily vegetable allowance

Ingredients
  • 4 cups jicama
  • 2-3 medium sized fresh tomatoes (less tomato for more spicy)
  • ½ red onion
  • 1 jalapeño chili pepper
  • 1 Serrano chili pepper (optional)
  • ½ cup cilantro
  • lime juice
  • salt
  • pepper
Directions
  • slice jicama into French fry sized sticks and set aside
  • finely dice tomatoes, onions and cilantro
  • be careful handling hot peppers - use a napkin or paper towel rather than direct contact and make sure not to touch your eyes. remove seeds from peppers and finely dice.
  • combine tomatoes, onions, peppers and cilantro
    • adjust quantity of pepper you use to how spicy you like your salsa
  • add lime juice, salt and pepper to taste
  • let sit for an hour for flavors to combine
  • dip jicama sticks in salsa and enjoy!

Tip: Also tastes great with Guacamole
