Watermelon Granita |  Vegetable Day

Makes 2 serving - uses 1 cup of your daily fruit allowance

Ingredients
  • 2 cups chopped watermelon (remove seeds)
  • 6 packets Truvia or other zero-calorie sweetener
  • 1 TBSP ReaLemon or other zero-calorie lemon juice
  • Optional sprig of mint or lemon/lime wedge
Directions
  • combine ingredients in a blender, mixing until smooth
  • pour mixture into a wide, shallow pan and freeze for 1 hour
  • remove from freezer
  • using a fork, rake the mixture breaking up ice crystals especially along the edges
  • place in freezer again for 1 hour
  • remove from freezer
  • using a fork, rake the mixture again
  • place in freezer again for 1 hour
  • remove from freezer
  • scoop mixture into glasses or bowls
  • optional, garnish with mint or lemon/lime
  • enjoy!
