Pumpkin  Banana Pudding  |  Vegetable Day
    
	For Halloween, Thanksgiving or just because, this tasty seasonal treat is sure to please.
Makes 4 servings. Uses 1 serving of daily fruit allowance and 5 oz of daily vegetable allowance.
	
    
    Ingredients
	 
    
	     
                      - 1 ripe banana
 
                         - 4 apples peeled and cut up
 
                         - 20 oz can of pumpkin, nothing added
 
                         - 2 tsp vanilla extract
 
                         - 6 packets of Splenda or other zero-calorie sweetener
 
                         - 2 packages unflavored gelatin dissolved in 1 cup of water
 
                         - 1 package orange sugar-free Jell-O dissolved in 1 cup of water
 
                         - 2 tsp cinnamon
 
                         -  ½ tsp pumpkin pie spice
 
                         -  ⅛ tsp nutmeg
 
- 4 mint leaves for garnish, optional
 
- 4 cinnamon sticks for garnish, optional
 
                    
  
    Directions
     
                      - Blend all ingredients together in food processor       or blender.
 
- Pour mixture into 4 dessert bowls or shaped molds.
 
- Chill until set. 
 
                         - Optional, garnish with a mint leaf or cinnamon stick.
