Pumpkin / Banana Pudding |  Vegetable Day

Will be very nice for Thanksgiving. I counted one serving as my fruit allotment for the day.

  • 1 ripe banana
  • 4 apples peeled and cut up
  • 1 20 oz. Can of pumpkin (nothing added)
  • 2 tsp. vanilla flavoring
  • 6 packs of Splenda
  • 2 packs unflavored gelatin dissolved in 1 cup of water
  • 1 package orange sugar free Jell-O dissolved in 1 cup of water
  • 2 tsp. cinnamon
  • ½ tsp. pumpkin pie spice
  • ⅛ tsp. nutmeg
  • blend all together in food processor (or blender) and then chill until set
  • I divided this into 4 pretty little dessert dishes before I refrigerated
  • when I served it the next night, I put a pretty little mint leaf on top
  • I have also made this and put it into little pumpkin molds that I sprayed with a little touch of pam, they came out real cute
