Kale And Cauliflower Soup |  Vegetable Day

Makes 4 servings - uses 8 oz of your daily vegetable allowance

Ingredients
  • 32 oz Pacific vegetable broth or other brand of “legal” vegetable broth
  • 1 small head cauliflower
  • 1 bunch red kale
  • 4 cloves garlic
  • pinch of Himalayan salt (pink salt)
Directions
  • put all ingredients in a pot and simmer until cauliflower is soft
  • remove from heat
  • put in blender and puree until it has the texture of pea soup
    • note, if you are using a personal blender, you should measure out single servings and blend one at a time
  • enjoy!
