Miracle Noodles

Miracle Noodles have been approved by Dr Schwartz for use on the program.  They can be purchased from the Miracle Noodle web site:  www.miraclenoodle.com.  If you see Miracle Noodles in Oriental grocery stores be sure they are "shirataki noodles" made from yam flour, zero calories, and not the soy- or tofu-based noodles.

Miracle Noodles are made of a soluble fiber and contain no carbohydrates, starch, or calories.  They may be used once a week on vegetable days (or once every 2 veggie days).  Serving size is 7 ounces.  The noodles have no flavor but will take on the flavor of the vegetables you put with them.  Most of the people on our program seem to favor the angel hair as it is thin and described as less rubbery.

Miracle Noodles come in a liquid pack of 14 oz.  There is an "aroma" when you open the plastic pack but rinsing them in cold water for a few minutes and following with a hot water rinse will help eliminate this aroma.  Miracle Noodle also recommends "dry roasting" the noodles to eliminate the aroma using the following steps:

1.    Heat a non-stick skillet over high heat
2.    Add the shirataki noodles and dry roast for around 1 minute.
3.    When they are dry, you often hear a squeaking noise as you move them.
4.    Add stock, sauce, or vegetables.

Miracle Noodle Suggestion from Gilda

There is an odor when you open the package but if you soak them for about 2 minutes in cold water and then 2 minutes in hot water, the smell is gone. You can then add them to soup or a sauce and cook for about 2 minutes. If you leave it overnight the noodles will absorb more of the flavor. I find it's more of a texture change - they don't have much flavor. I love slurping them up. The thicker versions are more rubbery but I don't even mind that. Remember only half the pack is considered one portion.  A s ingle serving is as defined on their package (sometimes 1/2 pack, sometimes 1/3 pack). The rest should be put in water in a covered container, used within 5 days and water changed daily. If you have "sauced" them, use within 2 days.

If you miss real spaghetti (and spaghetti squash is not your thing) then try the Miracle Noodles.

Zero-Calorie Asian Sesame Noodles (Barbara)

Ingredients:
1 package Miracle Noodle Angel Hair Pasta
Walden Farm's Peanut Butter
Bragg’s Liquid Aminos
Garlic Salt

Per the Miracle Noodle instructions:
Rinse the Miracle Noodles in cold water for 3 – 5 minutes
Boil water with garlic salt.
When water is boiling, turn off the flame and “cook” the noodles FOR 1 MINUTE.
At the end of the 1 minute, drain the noodles and dry with a towel or paper towel. 
Get out as much water as possible.
Note:  the noodles are quite long, so you may want to cut them.

Mix 2 teaspoons of Walden Farm's Peanut Butter Spread with 25 – 30 sprays of the Bragg’s Liquid Aminos. 
Mix into a paste. 
Add a touch of garlic salt to your taste
Mix peanut butter paste into noodles.  Mix well.

 Makes 3 servings.
